Knife Sharpening Q's

Since there is a wealth of knife knowledge here, can I get a rec?

I'm looking for a "budget" folder to carry while engaging in outdoor activities including hiking, backpacking, fishing, and camping. I would prefer something on the lighter end without loosing much, if any, functionality. I don't really know what I'm looking for in regards to blade length.
I would suggest this a look at this. https://www.buckknives.com/product/110-folding-hunter-knife/0110FAM01/

Classic! But comparatively heavy.
Agree. I have a Buck 110 and while it's beautiful, I don't find it to be the best EDC. It's heavy, and frankly it's not the quickest to deploy. If you keep it in the sheath you have to unbutton the sheath which is annoying and if you keep it in your pocket it's bulky and moves around a lot.

Opinel carbon size 7 or 8. Always in my pocket!

Note that it is not for batonning kindling, use as a hammer, or other heavy impact uses. But it is sharp, light, and well made with good steel for less than $20.
A friend of mine left the place we work and I gave him my well-loved Opinel carbon no. 7 pocketknife as a going away present. When I went to replace it, I found that Amazon now sells them for something like $40, while buying directly from Opinel costs $20! As a bonus, Opinel will personalize the handle or blade for a small additional fee.

I always carve/sand down the butt of the handle to fit my hand better. Here's my brand new No. 7:

I am at a loss. I am so terrible at knife sharpening its not funny. Any experienced person's out there that have good experience? I dont know what I am doing wrong. I am pretty sure this one dummy knife that I have been practicing on is completely screwed up. Will slice paper and then when i try to make it sharper I lose the edge. I have no idea how much pressure I should be putting down when grinding against the stone. Should I be putting tons of pressure down or the lightest touch? How the heck do I know the angle is correct when knife manufacturers use different bevel edges?

Currently I am trying the spiderco rod sharpener and I am not having much luck. I am perplexed that their are men and women out there that can be given a stone and bam. Grrrrr
Definitely buy the Ken Onion Worksharp model. I’ve had one for years and they’re great. Besides the adjustable angles the belts are available in several grits from coarse to super fine. Watch the YouTube videos and practice on your cheap knives before grinding the expensive ones. Knives have as many design criteria as boat hulls. Thinner blades are better slicers than thicker blades. Thicker blades are more durable. Softer steel sharpens faster but doesn’t hold an edge as long as harder steel. Stainless steel is more rust resistant than carbon steel.

You should purchase a few knives if you plan to spend much time in the outdoors. A 91 mm Swiss Army Knife with 3-4 layers to carry on your person. Large blade/small blade/ can opener/screwdriver/scissors. Pick the most useful to you: Phillips or corkscrew/saw or file. Buy one of those Openels. The National knife of France. Cheap and useful. A decent Rapala fillet knife for about $30. Avoid the cheap ones because the steel stinks. A good quality multitool to keep in your truck. Something like a Leatherman Wave to keep in the car to do emergency repairs of gear. Buy the bit set for $20 extra.

I’ve read through this and my feedback is it’s irrelevant what my EDC Is. If you want a sharpening system that works for all your knives check out Wicked Edge. It takes time to set up for each knife shape and grind angle, but once done it’s a foolproof easy to use system. Keep good records and set up according to your initial work and putting a quick edge with 800 and 1000 stone is a breeze.

I just want to be able to cut a garden fresh tomato with out squishing it or an onion without the layers sliding
When I worked in a Mexican restaurant, as a ski bum, the Vatos all used serrated bread knives for tomatoes. Worked well..

Hmmmm. I wonder if I responded to a knife sharpening thread on WFF a long time ago. Thought it was here.

I had a first generation WS by Ken Onion i picked up while I was doing demos with CeeDub at the Sportsman Show. I had went off to have lunch with my wife, who had stopped by the show. While i was gone the guys from WS stopped by the cooking area where we were doing demos. He couldn't get ahold of me so he had them sharpen up all the knives in my roll. I do sharpen my knives a certain way, depending on how I use them. Prime example I only sharpen near mid to point of 1 of my 2 paring knives. I'll rest the full rear of the blade against my thumb so don't want it sharp that far back.

Get back from lunch and Butch forgot to tell me they had sharpened all my knives. Grabbed my special paring knife to work on some fruit and the blade sunk through my thumb like butter. I was looking at my thumb in disbelief. I told Butch I had a problem and ran over to the med station. Luckily there was a doctor there, not just medics. So the doc cleaned it up and used the glue to sutcher it up. Put a new glove on and went to talk to Butch. He apologized and told my the guys from KO had stopped by. He immediately bought a set up. I went over to them at their booth and told them what happened. They apologized and I told them you did your job, and well 😆. They let me buy the demo unit super cheap after the show. I've used it for years, it just died a year or so ago. I'm going to buy a new one. Just haven't got around to it since I still have my steels and stones. But can't swear enough by the Ken Pinon Onion system.

I was really hoping that by the time I hit my 40's I would be done doing dumb shit. Learned the hard way this is a really stupid place to store your axe. I didnt take pictures but I rusted up my axe edge pretty bad. However, the work sharp with the course belts on high fixed it. Lessons learned AGAIN.

Hey guys just a quick update as I know a few were interested. The sheath that I ordered back in December for my Rat 5 finally arrived. It was a long wait. Dear lord the retention strap was short and needed serious work stretching the leather in order to wrap around the handle. With some elbow grease and Rawlings ball glove oil I got the thick leather to give. The bolt is there as a place holder to give me a bit of slack. I will remove once dry.
